Herb Sauce
Time: Preparation time: 5 minutes Cooking time: 3 to 4 minutes
Ingredients: 1 ½ teaspoons cornstarch 1 cup reserved beef poaching liquid, strained ¾ teaspoon snipped fresh rosemary or ¼ teaspoon dried rosemary leaves, crushed 2 dashes pepper 1 teaspoon butter
Procedure: Dissolve cornstarch in 1 tablespoon poaching liquid. Combine cornstarch mixture, remaining poaching liquid, rosemary and pepper in small saucepan. Bring to a boil; cook over high heat 1 to 2 minutes or until thickened, stirring constantly. Stir in butter. Yield: Approximately 1 cup.
