| Blue Cheese Sauce |
Time: Preparation time: 5 minutes Cooking time: 3 to 4 minutes

Ingredients: 1 teaspoon cornstarch ¾ cup reserved beef poaching liquid, strained ½ cup half and half 1/8 teaspoon ground white pepper 1 ounce blue cheese, crumbled |
Procedure: Dissolve cornstarch in 1 tablespoon poaching liquid. Combine cornstarch mixture, remaining poaching liquid, half and half and pepper in small saucepan. Cook over medium heat 3 to 4 minutes or until thickened, stirring frequently. Remove from heat. Add cheese; stir until melted. Yield: Approximately 1 cup.
