| Gourmet Burger With Salsa Trio |

Ingredients: 12 pounds 24(8-ounce patties) Ground Beef Patties 24 Hamburger buns, halved horizontally ¼ cup Olive oil 3 cups Southwest Salsa(recipe follows) 3 cups Island Salsa(recipe follows) 3 cups Salsa Ole(recipe follows) |
Procedure: 1. Grill beef patties to desired doneness, turning once. Keep hot. 2. For each serving: Brush cut sides of bun with oil; grill or broil until golden. Layer bottom half of bun with beef patty and 2 tablespoons salsa of choice. Top with remaining bun half. Serve hot. Garnish plate with leaf lettuce, and tomato and onion slices. |
Notes: 24 Servings SOUTHWEST SALSA: Mix 1 pound drained, canned, whole kernel corn, 1 ¼ cups sweet pickle relish, 2 ½ tablspoons Dijon-style mustard, 2 ½ teaspoons mustard seeds and 1 teaspoon salt. Makes 3 cups. ISLAND SALSA: Mix 1 pound, 2 ounces drained, canned, crushed pineapple, 3 ounces sliced green onions, 1/3 cup distilled white vinegar, ¼ cup chopped cilantro, 1 ½ teaspoons red pepper flakes and ¾ teaspoon salt. Makes 3 cups. SALSA OLE: Mix 1 pound, 2 ounces chopped tomatoes, 3 ounces chopped onion, 3 tablespoons chopped cilantro, 3 tablespoons dry red wine, 1 ½ teaspoons minced jalapeno peppers and 1 teaspoon each salt and pepper. Makes 3 cups. |
